Michigan Cherry Salad
drizzled with drench
Balsamic Fig Vinaigrette
Combine the following Ingredients:
4 oz Mixed greens
4 oz Butter Lettuce
4 oz Arugula
Top greens with:
•1/2 red onion sliced thin
•1 Granny Smith or Honey Crisp apple chopped into small cubes
•4 oz Crumbled feta cheese or goat cheese
•1/2 cup Dried Michigan cherries
•3/4 cup Healthier candied walnuts or pecans (see recipe below)
•1 tbs Michigan Maple syrup or honey for caramelizing the nuts
•Olive oil or butter for caramelizing the nuts
•“drench” Balsamic Fig Vinaigrette
Healthier Candied Nuts:
•Melt just enough butter or heat just enough olive oil to coat a sauté pan.
•add Michigan maple syrup or honey and stir on medium heat for about 30 seconds.
•Add the walnuts or pecans on medium low heat stirring often for a few minutes until the syrup caramelizes and thickens a bit and the nuts are toasted.
•Remove the pan off of the heat and carefully spread the hot candied nuts onto a parchment lined metal sheet pan to cool.
